Professional chef's pan with excellent frying properties and almost eternal use! A carbon steel pan is a good alternative to Teflon pans and requires little care, like cast iron pans. In a well-maintained carbon steel pan, a natural non-stick surface is formed by grease and carbon, reducing the need for maintenance and increasing resistance to sticking. A well-used carbon steel pan even has the properties of a cast iron pan and the non-stick ability of a Teflon pan! In addition, you can use metal utensils with the pan without worries.
In the De Buyer Mineral B series, the pan has an all-natural and chemical-free organic beeswax coating. The coating protects the pan against rust and makes the pan easier to use. It forms the first frying surface for carbon steel and at the same time improves the non-stick properties of the pan. Wash the pan with hot water to remove any layer of beeswax before first use - most of the beeswax will be removed from the surface. The small amount of wax that may remain does not interfere, but even helps in the use of the pan. If you wish, you can also 'fat burn' the pan.
Carbon steel is not as porous as cast iron as a material, so you can safely cook all types of food in it. Be careful with high-protein foods, such as eggs or white fish, and lower the temperature properly. Don't try to keep the carbon steel shiny like stainless steel, as it changes color with use. The inside of the pan darkens and when the inside is completely black, the natural non-stick surface is at its best.
The carbon steel pan should not be washed in a dishwasher, usually hand rinsing with warm water is sufficient. You also cannot store food in the carbon steel pan or leave it in the sink to soak because of the risk of rust. If the pan gets surface rust, you can easily remove it with a coarse sponge or steel wool. After use, washing and drying, you should also apply a drop of rapeseed oil to the pan to prevent surface rust during storage.

The pressed frame of the carbon steel pan can sometimes twist a little. To prevent this, you should avoid putting the hot pan in cold water. Using the pan with the highest heat on the stove can also cause warping. If warping occurs, you can heat the pan a little and place it on a stable surface upside down, then tap with a hammer in the center of the bottom of the pan.
